My beet roots aren't ready for harvesting yet. These are the leaves of a few plants that needed thinning out (a little late, but hey - better late than never). Look at that gorgeous color!
We love beet greens (this size) sauteed in butter with sea salt and pepper on top. We use the tiny baby beet greens from early thinnings in salads. Delicious and nutritious!
